"Chicken" Alfredo Pasta

So you are transitioning to a vegan diet and you believe that you will have to give up on some of your favorite foods? Well I have good news, you can veganize anything. So if you currently like pizza, burgers, tacos, and pasta. You will be just fine. Not only can you veganize those dishes but you can also make a healthier version of it. One of my favorite dishes growing up was "Chicken Alfredo" specifically the one from my sister's kitchen and Olive Garden. lol

Today, I made a vegan version of "Chicken Alfredo" and it was delicious. I didn't follow any sort of recipe, but I did create a guide so that you all would be able to try this dish out.

What you will need:

Pasta (Linguine, Penne, Rigatoni, or Spaghetti)

Frozen Mixed Veggies of your choice (I had broccoli, snap peas, carrots, and yellow peppers)

Victoria Vegan Alfredo

Sweet Earth Mindful Chik'N Strips


Cook pasta according to package directions. (I like to put a little salt in my water while it is boiling)

Drain using colander or strainer once al dente and set aside.

In a large saucepan add cooking oil and sauté minced garlic, frozen vegetables, basil, thyme, nutritional yeast, garlic powder, pepper, old bay seasoning and salt to taste and sauté. Add in Alfredo sauce.

Transfer pasta into the large saucepan with the other ingredients. Serve with a side of toasted bread or salad.

Unfortunately, I don't have exact measurements for this recipe. I honestly threw this dish together and just experimented with it. I will be sure to revise this recipe with exact measurements in the future. However, this dish turned out really great.
